Do not let anyone tell you that vegan cuisine equals green leaves and some grass on a plate! :) Here you are, a fabulous Middle European meal to make your day.
Ingredients for two
- Seitan made of 125 g wheat gluten
- 1 big mushroom
- half an onion
- half a green pepper
- 200 ml (soy) cream
- 1 tbsp sweet ground red pepper
- 1 tbsp flour
- 3 tbsp tomato paste
- salt, pepper, oil
- For the noodles: 200 g flour, 60 g chickpea flour, salt
- Cut the onion to small pieces and sauté in oil.
- Add the mushroom and green pepper cut into cubes and let boil for a couple minutes.
- Mix the cream with red pepper, tomato paste, flour, salt and pepper and pour over the seitan. Bring it to boil for a minute.
- Prepare the noodles as follows. Mix flours with salt and as much water to get a thick cream texture. In a big pot heat water and when boiling, release the batter into it through a noodle filter into it. If you do not happen to have such a filter, try to use the cheese grater's coarse side. The noodles are ready when they come up to the surface.
- Serve with home made pickles.
Preparation time: 30 minutes (with ready made seitan)
