Briam

Greek Oven Baked Vegetables


In Greece one can have real good veggie meals. Take Briam for instance that is a very popular dish prepared in towns and equally on islands. Locally it is served with feta cheese but I call for hummus and fresh bread. And of course it is tasty just as is.

Attention: it is difficult to stop and is the same delicious hot and cold. :)

Ingredients for two big baking pans (8-10 servings)

  •    1 kg potatoes
  •    3 middle sized zucchinis
  •    2 middle sized aubergines
  •    4 tomatoes
  •    2 green peppers
  •    3 onions
  •    500 g canned shredded tomatoes
  •    1 tbsp spearmint
  •    300 ml olive oil
  •    parsley
  •    salt, pepper

Preparation
  1. Clean the vegetables, cut the edges of zucchinis and aubergines, peel the potatoes.
  2. Cut all into the baking pan to 1 cm thick slices except for the potatoes that should be a little thinner. 
  3. Add the tomatoes, shredded parsley, the mint, the olive oil. Season it with salt and pepper and  and stir well. 
  4. Add a little water and bake in the oven for 90 minutes at 210 degrees Celsius. Stir once and replace water under.


Preparation time: 30 minutes + baking
