Seitan is one of the best meat substitutes on earth. It is no other than gluten, the proteins found in wheat, rye and barley. Seitan can be used in various ways, basically it can be used just like meat; you can cut cubes, slice it, fry it or stew it. So it is a perfect alternative in vegan and vegetarian cuisine.
One can find so many recipes made of flour, but what if you have straight the wheat gluten at hand? This is for you then.
Ingredients
These seitan slices can be used just like any meat. The given quantities will make about ten slices, but it is worth preparing this much or even more at once. Put it into your deep freeze and then you have ready seitan whenever you please.

Note:you can adjust the texture by adding a little more or less baking soda or nothing at all. More baking soda will result lighter and softer seitan, something similar to chicken. Without baking soda seitan will rather look like duck or even beef. By adding soya sauce you can also darken your seitan to be similar to red meat.

- 250 g wheat gluten powder
- 50 g flour
- 1 level mocha spoon baking soda
- 2 tsp salt, 1 tsp ground red pepper, pepper, green herbs
- approximately 300 ml water
- Put a big pot of water to boil.
- In a bowl mix all the dry ingredients well. Then pour in the water. Be prepared for a dough forming in your hand surprisingly quickly. Do not add too much water just enough for the ball to gather all powder from the pot.
- Form a roll that is thick like your lower arm and put it aside for a couple of minutes.
- Cut the roll into 1-2 cm thick slices and place them into boiling water.
- Let it cook till the slices come up to the surface. Then take them out and drain.
These seitan slices can be used just like any meat. The given quantities will make about ten slices, but it is worth preparing this much or even more at once. Put it into your deep freeze and then you have ready seitan whenever you please.
