So Italian, So simple

I hesitated a lot with posting this recipe as it is so very simple but simply so delicious, juicy, tasty and light at the same time. The secret lies in the fresh ingredients of course. Having such at hand the rest is like a walk in the park.
Do not forget that from beginning to end in 20 minutes it will all be done.



Ingredients for 3


  • 250 g penne
  • 300 g fresh spinach
  • 4 tomatoes
  • 5-6 cloves of garlic
  • 20 g pine nuts
  • 100 ml olive oil
  • (vegan) parmesan
  • salt, pepper


Preparation
  1. Put the pasta in a big pot of boiling water to cook.
  2. Meanwhile in a pan heat the oil, and for half a minute sauté the chopped garlic and pine nuts. Be careful not to burn.
  3. Add the tomatoes sliced and the spinach leaves. You can keep a couple of each for decoration.
  4. Season with salt an pepper, mix cover and let it cook for 5-10 minutes till the spinach is soft and tomatoes release some juice.
  5. Drain the penne and sprinkle with olive oil. Serve with the tomato spinach sauce and top with cheese.
