Seitan with paprika and mushrooms

How bout your own leavened pickled cucumbers? It is so simple and so refreshing you will not regret it. Just put all raw ingredients in a bottle and wait for natural chemistry to do the rest.

Salad "Astrea"

Here is one of my favourite salads. So simple, such tasty, filling and still a light meal. Celery and Romaine lettuce add slight bitterness, while apple goes for sweet and sour and of course walnut with a distinct flavour. Believe me, no spices are needed. That is something!
Do not forget some mayonnaise for juice.

Here is a paté for very special sandwiches. But watch out, better eat for breakfast as it is difficult to stop! Give a try with hot sandwich as well, satisfaction guaranteed.

Cherry Pie Special

This pie's soft shortbread just falls to light crumbs while vanilla cherry charms each bite and roasted almond topping crunches under your teeth... 
No doubt this pie will have a great success. Preparing is easier then you think. There are quite a few ingredients but all you have to do is mix them and make them form three layers of the pie.

Light(er) vegan corn salad

Do you ever have urge for a mayo corn salad? How about replacing it with a non mayo one but quite the same flavour and no cholesterol but only clean plant based stuff and about one third of the calories? :)
Sounds good? Here is the recipe.

Vegan Wiener Schnitzel

Here you go: Wiener Schnitzel with no meat and no eggs i.e. vegan! This recipe is so simple and very traditional but of course without any cholesterol or animal ingredients.
Serve with French fries but it goes perfectly with mashed potatoes too.

Seitan

Seitan is one of the best meat substitutes on earth. It is no other than gluten, the proteins found in wheat, rye and barley. Seitan can be used in various ways, basically it can be used just like meat; you can cut cubes, slice it, fry it or stew it. So it is a perfect alternative in vegan and vegetarian cuisine.
One can find so many recipes made of flour, but what if you have straight the wheat gluten at hand? This is for you then.

Light celery creamsoup

This cream soup I prepare from the celery leaves and not the stalks. It is a pity that leaves are usually ignored and thrown away.
This soup is one of our favourites and hardly has time to cool down not to mention saving some for a photo. :)

Hummus

Being a vegetarian or even vegan can sometimes bring difficult moments when it comes to sandwiches.
How about some chickpeas full of flavour and proteins? Hummus is adored, prepared and in real serious arguments tulajdonít as national heritage by a couple of middle east nations. Instead of going into such discussions; let me share with you my recipe of hummus that goes great with bread or pita but perfectly accompanies grilled or oven baked vegetables too.

Briam

Greek Oven Baked Vegetables


In Greece one can have real good veggie meals. Take Briam for instance that is a very popular dish prepared in towns and equally on islands. Locally it is served with feta cheese but I call for hummus and fresh bread. And of course it is tasty just as is.

Attention: it is difficult to stop and is the same delicious hot and cold. :)
