A romantic afternoon... Guests are about to come... And a cake that can be baked the day before and when you slice it it is like all fresh. So that you can spend more time with your beloved ones and even on yourself. So simple and delicious, yummie! Serve with coffee or tea.
Ingredients for a 1,5 litre mold
- 3 ripe bananas pured
- 130 g blueberries
- 1/2 cup of whole wheat flour
- 3/4 cup white sugar
- 3/4 cup dark brown sugar
- 3/4 tsp baking powder
- 3/4 tsp salt
- 1 packet of vanilla sugar
- 1/2 cup plant based milk
- 1 tsp lemon juice
- 1/4 cup coconut oil
Preparation
- In a bowl mix the dry ingredients.
- Add the lemon juice to the milk and let it stand for a couple of minutes.
- Meanwhile blend the bananas and mix it with all the wet ingredients. Add the lemon milk too.
- Mix dry ingredients with wet. Gently stir by hand till you get a smooth battle.
- Add the blueberries and pour in the oiled mold.
- Bake in a preheated oven at 170 degrees Celsius till the inside is firm. Cover with a foil if necessary to avoid the top burned.
When ready, remove it from the mold and let it cool down before slicing.
