If you like the Mediterranean oven baked bell peppers, you will love this one stuffed with millet and walnuts.
Ingredients for 3
- 6 red peppers
- 110 g dry millet
- 80 g walnuts
- 2 heaping tbsp nutritional yeast
- 2 clove of garlic
- salt, pepper, 4-5 stalks of parsley chopped
Preparation
- Cook the millet in water of three times its volume. Add salt and pepper while boiling. Drain the millet if necessary.
- Add the walnuts chopped, the parsley, the mashed garlic and the nutritional yeast.
- Cut the top of the peppers, csumáz ki and fill them with the millet mix.
- Put back the tops and place the peppers into a baking pan.
- Sprinkle with olive oil, add a little water and bake at 200 degrees Celsius till the skin gets brown.
Preparation time: 45 minutes
