Baked peppers stuffed with millet and walnut

If you like the Mediterranean oven baked bell peppers, you will love this one stuffed with millet and walnuts.


Ingredients for 3


  • 6 red peppers
  • 110 g dry millet
  • 80 g walnuts
  • 2 heaping tbsp nutritional yeast
  • 2 clove of garlic
  • salt, pepper, 4-5 stalks of parsley chopped


Preparation
  1. Cook the millet in water of three times its volume. Add salt and pepper while boiling. Drain the millet if necessary.
  2. Add the walnuts chopped, the parsley, the mashed garlic and the nutritional yeast.
  3. Cut the top of the peppers, csumáz ki and fill them with the millet mix.
  4. Put back the tops and place the peppers into a baking pan. 
  5. Sprinkle with olive oil, add a little water and bake at 200 degrees Celsius till the skin gets brown.
Preparation time: 45 minutes
