Coconut puding with raspberries

Sometimes the simplest  things are the best.
Impress your guests or just caress yourself a little with this delicious pudding.
Spend a couple of minutes on the serving too as a special touch will add to the experience.


Ingredients for three

  • 600 ml plant based milk
  • 60 g corn starch
  • 5 heaping tbsp coconut desiccated and shredded
  • 4 heaping tbsp coconut milk powder
  • 3 tbsp sugar
  • raspberries (blueberries or red currant)


  1. Mix the starch with 200 ml milk and the sugar with the rest of the milk.
  2. Stir the milks together, add the coconut and coconut milk powder. Bring to boil.
  3. Rinse small glasses with water and place fruits to the bottom. 
  4. Pour the pudding into the glasses and decorate with further fruits.
  5. Place it in the fridge for a couple of hours before serving.

Preparation time: 15 minutes

Tip: you can use vanilla pudding powder instead of the starch but then the coconut-raspberry aroma will not be that distinct.
