Ingredients for three
- 600 ml plant based milk
- 60 g corn starch
- 5 heaping tbsp coconut desiccated and shredded
- 4 heaping tbsp coconut milk powder
- 3 tbsp sugar
- raspberries (blueberries or red currant)
- Mix the starch with 200 ml milk and the sugar with the rest of the milk.
- Stir the milks together, add the coconut and coconut milk powder. Bring to boil.
- Rinse small glasses with water and place fruits to the bottom.
- Pour the pudding into the glasses and decorate with further fruits.
- Place it in the fridge for a couple of hours before serving.
Enjoy!
Preparation time: 15 minutes
Tip: you can use vanilla pudding powder instead of the starch but then the coconut-raspberry aroma will not be that distinct.
